This recipe, originally taken from TheDailyPlate website (which is now owned by LiveStrong.com), is a healthy and low-fat take on monster cookies, those easy to bake treats that have something everyone will like. And best of all, this recipe substitutes ingredients like splenda, applesauce, and eggbeaters, so no one will know the difference! It is super yummy and you can add a variety of candies to them if you'd like. I usually add m&m's.

Instructions

Things You'll Need:

  • 1/4 cup Butter
  • 1/3 cup Brown Sugar
  • 1/3 cup Splenda
  • 1/3 cup Eggbeaters (or egg substitute)
  • 1/2 cup Peanut Butter
  • 1/2 cup natural applesauce
  • 2 1/4 cups Oats
  • 1 tsp. Baking Soda
  • 1/8 tbsp. salt
  1. Step 1

    Preheat oven to 350 degrees and soften butter by placing it in the microwave for about 30 seconds, more or less.

  2. Step 2

    In a small bowl, blend butter, brown sugar, Splenda, and egg substitute together. In a separate bowl, mix peanut butter and applesauce.

  3. Step 3

    Combine the 'dry' and 'wet' separate ingredient bowls as mentioned above together into one bowl. Stir until fully mixed.

  4. Step 4

    Drop by rolled teaspoons onto an un-greased cookie sheet (you may need more than one cookie sheet). Bake for 12-15 minutes, or until edges are slightly brown.

Tips & Warnings
  • Add raisins, nuts, chocolate chips, or M&Ms to the mix!
  • A tsp. of cocoa mixed in with the 'dry' ingredients is a good touch.
