Things You'll Need:
- Persian Rice
- 2 bags chopped spinach (fresh or frozen)
- Olive Oil
- Garlic
- Extra firm tofu
- Sea-salt, pepper
- Dash of hot sauce

Step 1
This recipe is so good and my family loves it. Every week I try to have a few meatless dinners. It doesn't take long to make this meal. Thirty minutes from preparation to the dinner table. Start with the freshest spinach you can find. If you can't find fresh spinach then use frozen spinach. I've used both types in this recipe and they both taste good so it depends on your preference. Make sure if you use fresh spinach to wash it good. I usually just use water to wash my vegetables but you can also put a little sea-salt in the fresh water to clean your vegetables. Rinse and pat dry.

Cook your Persian rice according to package directions in a separate pan. Take a large frying pan and add olive oil to cover the bottom and add garlic. Chopped fresh garlic is delicious but if you don't have fresh garlic on hand then you can use powdered garlic or even the garlic that comes in jars in the store. It just depends on what you have in your pantry. Heat the olive oil and garlic on medium heat till the garlic turns golden and add sea-salt and pepper. Next cut up your extra firm tofu. I dice mine but it would be your preference as to how you want your tofu because you can dice or slice it depending on how big you want your pieces to be. Let your tofu cook for a few minutes.

Add your chopped spinach to your mixture in the frying pan and cook for approximately 15 minutes depending on how much spinach you are actually cooking for this meal. When your spinach is cooked the way you like it add a dash of hot sauce for flavor. You don't want your meal to be hot but the hot sauce will add a little touch of heat.
By now your rice will be done. Put your rice in a big serving bowl and add all the ingredients from the frying pan. Mix together and serve. This recipe is very filling and should make a wonderful departure from meat and potatoes. They say variety is the spice of life and this makes a nice change for your family and friends.
