How to Cook Broasted Chicken

Broasted, or broasting, is a trademark name owned by the Broaster Company of Beloit, Wisconsin. Broasted chicken is chicken fried in a specialty pressure cooker manufactured by Broaster. The cookers are available only to restaurants and cannot be purchased for home use. If you own a pressure cooker, you can replicate fried chicken very similar to Broasted chicken and serve it to your family. Does this Spark an idea?

Things You'll Need

  • Chicken parts, i.e., legs, breasts, thighs
  • Water
  • ¼ cup salt
  • 2 large bowls
  • Flour
  • Cornstarch
  • Cajun seasoning
  • Salt and pepper
  • Canola oil
  • Pressure cooker
  • Candy thermometer
  • Kitchen tongs
  • Wire rack

Instructions

    • 1

      Combine 4 cups water and 1/4 cup of salt in a large bowl or a deep pot.

      Brine the chicken parts in the water for one to two hours in the refrigerator.

      Make a coating for the chicken by combining 1 cup flour, 1 tbs. cornstarch, 1 to 2 tbs. Cajun seasoning and salt and pepper to taste. Add water to make a thin batter in a second large bowl or shallow pan.

      Put approximately two inches of Canola oil in the bottom of a pressure cooker. This will take anywhere from 1 to 2 cups depending on the size of the cooker. Bring the temperature of the oil to 375 degrees over high heat.

      Remove the chicken from the brine and dip into the batter, coating each piece completely.

      Use kitchen tongs to lay the coated chicken pieces into the hot oil. Fry until golden brown, turning once during the process to brown both sides.

      Place the lid on the pressure cooker, and lock it in place.

      Cook the chicken for 12 to 15 minutes under pressure.

      Remove the cooker from the heat, and place on a wire rack in the sink. Run cold water over the pressure cooker to cool the cooker down, release the pressure and stop the cooking process.

      Open the cooker when the lid can be unlocked without using any force.

      Place the chicken on paper towels to drain and let cool for an additional 10 minutes before serving.

Tips & Warnings

  • Make sure all components of your pressure cooker are working properly before attempting to fry food in your cooker. You can vary the seasoning in the flour coating to suit your own tastes. Try fajita seasoning mixes or Italian herb blends for something different.

  • Never force the lid of a pressure cooker open. This can cause severe burns as the steam under pressure is extremely hot.
