Cajuns love seafood, and shortcuts are helpful in our busy lifestyle, so we have adapted a Cajun shrimp pasta recipe to make an easy salad.

Instructions

Things You'll Need:

  • Macaroni pasta, cooked and drained.
  • Chopped celery
  • Chopped sweet pickles
  • Canned tiny peeled shrimp
  • Cajun seasoning
  • Dressing of your choice
  1. Step 1

    Cook the macaroni pasta with a little salt in boiling water until tender. We cook about a cupful of raw pasta, but that is for two. Adjust to suit your family.

  2. Step 2
     

    While the pasta is cooking, chop celery and sweet pickles in the bowl you plan to mix the salad in. We use about half a cup of each, but double the pasta will take about a cup of each.

  3. Step 3

    Open a can of tiny shrimp--or two cans if you are making a large amount. (Real Cajuns use real shrimp, fresh out of the water but we don't live in Louisiana now, so we have to make do.) Rinse under running water and drain the shrimp. Sprinkle shrimp with Cajun or Creole seasoning. Mix with the celery and sweet pickles.

  4. Step 4

    Drain the pasta and stir into the other ingredients. Add some more seasoning and whatever dressing you might like and stir. We sometimes add pickle juice and mayonnaise, but you can try different dressings to find what you like. Refrigerate.

Tips & Warnings
  • Use small amounts of Cajun or Creole seasoning until you are sure you like cayenne pepper. If you like Tabasco, you can also add Tabasco to the dressing.
