The combination of fruit and veggies in this salad make a wonderful sweet and tangy meal that makes eating healthy actually taste good!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • chicken
  • 1 cup of spinach leaves
  • 1/4 cup of pineapple chunks
  • 1/4 cup of banana peppers
  • 1/2 of a tomato (diced)
  • 2 hard boiled eggs
  • Honey BBQ sauce
  • shredded cheese
  1. Step 1

Start by putting your chicken on to cook. You can use as much or as little as you want. I generally use 3 grilled chicken tenders, but you can also fry or bake any amount of chicken tenders or chicken breast.

  2. Step 2

Put your eggs on to boil. (Boil for 10 minutes).

  3. Step 3

While the chicken is cooking and eggs are boiling, put together the rest of your salad.

  4. Step 4

Put in the spinach first. Then dice and add your tomatoes.

  5. Step 5

Add your banana peppers. Sweet red peppers can also be used, but the banana peppers create most of the tangy flavor in this recipe.

  6. Step 6

    Add your pineapple.

  7. Step 7

Crack and peel your hard boiled eggs. Slice or dice the eggs and add them to the salad.

  8. Step 8

Cut up the chicken and add it on top. Then add as much shredded cheese as you wish.

  9. Step 9

Add the Honey BBQ sauce as you would any dressing. Now you're all done! Enjoy!

Tips & Warnings
  • To make this salad as healthy as possible, use as little dressing as you can and grill or bake your chicken. You can also leave off the cheese to save a few calories.
  • This salad is packed with fruit and veggies, so it is very filling. You can leave off the chicken if you wish.
