Are you one of those people with lots of blueberries and overgrown rhubarb plants that you just don't quite know what to do with? If you are, then do I have a recipe for you! This blueberry-rhubarb crumble is so good everyone will be coming back for more!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 1/2 C Rolled Oats
  • 2/3 C packed brown sugar
  • 1/2 C all purpose flour
  • 1/2 C butter or margarine
  • 3 C blueberries
  • 2 C rhubarb, cut into 1 inch pieces
  • 1/2 C granulated sugar
  • 2 TBSP all purpose flour
  1. Step 1

    Combine the 1 1/2 C rolled oats, the packed brown sugar and the 1/2 C of flour. Cut in the butter or margarine until the mixture resembles coarse crumbs.

  2. Step 2

    Set aside 2/3 C of the crumb mixture to use later. Pat the remaining crumb mixture into the bottom of a greased 9 x 1 1/2 inch round baking pan. Bake in a 350 degree oven for 10 - 15 minutes until a light golden brown.

  3. Step 3

    Meanwhile combine the blueberries and the rhubarb. Add the granulated sugar and the 2 TBS of flour. Toss to coat.

  4. Step 4

    Carefully remove the crust from the oven. Spoon the blueberry and rhubarb mixture over the top of the crust. Sprinkle with the crumb mixture that was reserved from step 2.

  5. Step 5

    Return the pan to the oven and bake for an additional 45 to 50 minutes until golden brown.

Tips & Warnings
  • This recipe serves 6.
  • Oven will be hot! Use caution when removing pan from the oven!

on 8/21/2009 Oh, it sounds good. I already used my rhubarb with strawberries, but will have more soon. I have lots of blueberries right now.
