How to Oven Roast Asparagus

Asparagus is one of my spring and early summer favorites. I look forward to asparagus coming into the super markets o big sales every spring. I often just boil it and butter and salt it. Recently I have been oven roasting asparagus and love the result. here is an easy recipe.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 pound of asparagus
  • 1/4th cup olive oil
  • 1/4th cup balsamic vinegar
  • salt to taste
  • 1/2 teaspoon ground pepper
  • Optional 1/2 cup fresh Parmesan cheese
  1. Step 1

    Wash the asparagus and pat dry. Trim the asparagus spears. I often bend the fat end and go with where the spear breaks naturally.

  2. Step 2

    Lightly toss the asparagus in olive oil and balsamic vinegar until well coated. Add salt and pepper to taste. Place the asparagus spears into a shallow glass baking pan.Only one layer thick is best.

  3. Step 3

    Preheat the oven to 450 degrees. Now sprinkle the asparagus with fresh grated Parmesan cheese. I have also used other cheeses like Parmigiano-Reggiano. Any good flavor cheese you like will work.

  4. Step 4

    Now bake the asparagus for about 15 minutes. Basically until the cheese melts well. The asparagus should be tender but also stay crisp. Serve while still hot from the oven.
