You can make an edible sugar mold from any candy mold or even from a cookie mold. However, the most popular edible sugar items made from a mold would have to be Easter eggs. As the spring holiday draws near, you can see sugar-molded eggs, decorated and packaged, ready to be placed in Easter baskets, given as a separate holiday gift or as part of a celebratory table centerpiece. By following a few steps, you can make your own edible Easter sugar molds. Does this Spark an idea?

  • Large egg mold(s) Pastry bags Pastry frosting tips 1 egg white Food coloring 3 ½ cups granulated sugar ½ cup powdered sugar Royal icing Candy decorations (optional)

Instructions

      Pour the egg white and two to three drops of yellow (or other color) food coloring into a small mixing bowl and blend with your mixer, until it is white and frothy. Consider that the color you see in the bowl now will be diluted by the sugar, appearing much lighter.

      In a large bowl, blend the two sugars together. Pour the egg into the sugar mixture and mix until all the sugar is moist. Do not add more liquid.

      Scoop the sugar mixture into the two sides of your egg mold. Press to remove any air bubbles and to make sure the whole mold is filled out evenly. Repeat for any additional sugar molds.

      Scrape the sugar off the top of the egg mold with a spatula or nonserrated knife, to make the sugar mixture even and smooth.

      Place a flat piece of stiff paper or cardboard, such as poster board, on top of the egg mold. Keeping one hand on the bottom of the mold and the other on top of the paper, flip the mold over. The edible sugar egg should come out easily. Repeat the same process for the second half of the egg and any additional eggs.

      Let the edible sugar molds set and dry for five hours or more.

      Use your pastry bag and a frosting tip to pipe a thin line of royal icing on the inside edge of one of the sugar eggs. Place the other half on top and press to join the two halves together. Wipe off any excess frosting that may seep out the crack and be visible. Let the frosting adhesive dry for another hour.

      Decorate the exterior of the edible egg sugar mold, using royal icing. Use the pastry bag and frosting tips to create a border around the sugar egg, to cover the seam. Continue decorating the front of the egg with icing and candies, as you prefer.

  • These edible sugar egg molds can be hollowed out and decorated inside, if you desire.
