Instructions

    • 1

Grease a shallow baking pan with oil or lard to prevent sticking. Preheat the oven to 375 F.

    • 2

Lay thinly sliced potatoes in the shallow baking pan, making sure the slices are distributed evenly in the pan at about the same depth.

    • 3

Melt the butter or margarine in a saucepan. Whisk the flour into the butter until the mixture is smooth.

    • 4

Add the milk, and cook the mixture over medium heat until it is thick and bubbly.

    • 5

Add the grated Cheddar cheese, and stir the mixture continuously until the cheese is melted.

    • 6

Pour the cheese mixture over the potatoes in the shallow pan.

    • 7

Cover the pan with aluminum foil, and place it in the oven for 30 minutes.

    • 8

Remove the foil, and cook the potatoes uncovered for another 45 minutes to 1 hour, or until they are fork tender.

Tips & Warnings

  • Substitute any grated hard cheese you prefer for the Cheddar. Add a chopped onion or crumbled fried bacon to the potato slices before adding the cheese sauce to give the dish a different taste. Use leftover baked or boiled potatoes in this dish. Cut the cooking time by half if you use precooked potatoes. Substitute low-fat milk and cheese for a more calorie-conscious dish.
