Things You'll Need:
- 3 large eggs
- 1 tablespoon warm water
- Salt and pepper to taste
- 1 avocado, peeled
- 1/2 teaspoon fresh line or lemon juice
- Pinch of garlic salt, or seasoned salt
- 4 drops hot pepper sauce
- 1 small tomato, chopped
- 1 teaspoon chopped onion
- Sour cream, optional
- 1 tablespoon cooking oil

Step 1
In a bowl, mash 1/2 avocado with a spoon until paste-like (chunky). Mix in seasoned salt (or garlic salt), 4 drops hot pepper sauce (use more if you like), lemon or lime juice, onion and tomato. Blend well and set aside.

Beat 3 large eggs with salt and pepper to taste, plus 1 tablespoon warm water in a separate bowl.

Over medium-high heat with a skillet and cooking oil, pour in the egg mixture, swirling to cover pan bottom. Cook until eggs begin to set. Turn heat down to low and let eggs set.

Omelet should slide freely in the skillet before you put in other ingredients. Transfer omelet to a warm plate. Spoon guacamole mixture over half of the omelet.

Slip a spatula under the other half of omelet. Fold carefully the omelet in half, covering the contents. Cut the leftover avocado into slices and place on plate beside the omelet, if desired. Enjoy with sour cream (optional).
Makes 1 serving.
