When we think of lasagna dishes we tend to think of a calorie-laden, oily and starchy meal that is not very healthy. However, replacing or substituting certain ingredients in the recipe with healthier and lower-calorie ingredients can still give you a tasty and healthy lasagna dish. The following recipe for healthy lasagna will give you an adequate serving of whole grain carbohydrates and lean proteins.

Difficulty: Easy
Instructions

Things You'll Need:

  • Whole wheat or multigrain lasagna noodles
  • Lean turkey meat
  • Organic vegetables
  • Olive oil
  • Cooking pot
  • Cooking pan
  • Water
  • Cottage cheese
  • Low-fat cheddar cheese, grated
  1. Step 1

Go to the nearest organic or whole foods grocery store and find the ingredients. If you would like different vegetables, substitute the eggplant with squash and zucchini.

  2. Step 2

Heat up a pot of water for the noodles. Add 1 tablespoon of olive oil to prevent sticking and bring water to a boil. Add the noodles to the boiling water.

  3. Step 3

Brown the turkey in a pan and drain off grease. Add low-fat, light spaghetti sauce to the browned turkey and pour sliced organic mushrooms and vegetables in the dish.

  4. Step 4

Add a layer of meat sauce to the baking dish, followed by a layer of noodles, followed by cottage cheese. Repeat these layers once more

  5. Step 5

Sprinkle a layer of cheddar cheese on top and place in the oven. Bake on 350 degrees F for 35 to 40 minutes. Enjoy lasagna with a healthy organic side salad and slices of home-baked, fresh multigrain bread if desired

Tips & Warnings
  • Don’t burn the turkey.
  • Clean the vegetables thoroughly under running water.
