Making the transition to college can be a difficult one. Many students are overwhelmed with new friends, harder classes and new found independence. Students like to think they are the busiest people in the world and simply too busy to worry about the notorious Freshman 15. By choosing healthier alternatives instead of Cup o’ Noodles, pizza and other junk food, it can be quite easy to avoid the Freshman 15. Even in a dorm room, it is possible to cook a healthy, hearty meal--quickly. Here is a recipe.

Difficulty: Easy
Instructions

Things You'll Need:

  • • Ziploc Freezer Bag (quart size) • Egg Beaters or egg whites • Spinach • Onions • Tomatoes • Mushrooms • Turkey Lunch Meat (or you can substitute with other cooked meats) • Electric teakettle
  1. Step 1

Look over the grocery list and decide where to purchase or collect the ingredients. Many of the ingredients can be obtained from the salad bar in your school dining hall.

  2. Step 2

Fill your tea kettle and bring the water to a boil. Add the vegetables, meat and Egg Beaters to the Ziploc bag and mix together.

  3. Step 3

Squeeze out all of the air from the bag and seal it. Place the bag into the tea kettle for about 10 to 15 minutes or until the eggs are fully cooked.

  4. Step 4

Open the bag and enjoy your easy, healthy meal. This omelet can even be eaten on the go.

Tips & Warnings
  • Be careful not to overcook the eggs in the Ziplock bag.
  • Use new or very clean bags and wash the bag out after each use.
  • Finely chop the vegetables so they can cook faster in the Ziplock bag.
  • Serve with whole wheat or multigrain organic bread.
