If you are not a fan of squash, you may find you like this different type of squash! Spaghetti Squash is also referred to as vegetable squash. It received its nickname because the squash separates into strands resembling spaghetti after cooked. It is easily grown and great for dieters, very high in vitamins and low in calories and carb. Spaghetti squash can be used like other pasta.

Instructions
  1. Step 1

    Clean outside shell of spaghetti squash. Cut off stem. Cut spaghetti squash lengthwise and remove seeds.

  2. Step 2

    Place on microwaveable plate. Put 1 tablespoon of water in center of spaghetti squash.

  3. Step 3

    Cover top of spaghetti squash with saran wrap and microwave for 6 minutes. (Time will vary depending on microwave used and size of spaghetti squash). Check spaghetti squash after 5 minutes. It is done when strands easily separate with a fork.

  4. Step 4

    Let stand for 2 minutes, then scoop out the spaghetti squash strands out of the shell with a large spoon. Add 1 tablespoon of margarine (for fewer calories omit margarine)

  5. Step 5

    Cut up garden fresh tomatoes in small pieces, add to top of spaghetti squash and enjoy.

Tips & Warnings
  • Tips:
  • Spaghetti Squash shell will be very hot just out of the microwave. You may need to use a pot holder while scooping out the strands or wait until the shell has cooled enough to easily scoop out the spaghetti strands.
  • Cooking time will depend on microwave used and size of the spaghetti squash. Adjust the time accordingly. Cooking spaghetti squash in the microwave is much faster than using an oven, which can take 40 minutes or more.
  • I use cold tomatoes, which is a nice taste contrast to the warm spaghetti.
  • Spaghetti squash is growing in popularity as a health food. It is low in calories, at only 75 calories per 8 ounces, low in carbohydrates, only 5 grams of carbs per ½ cup serving, and an excellent source of Calcium, magnesium, Vitamins A, E and C. This is one pasta you can enjoy guilt free!
