Cajun Recipe Main Dish Macaroni Casserole

Casseroles are a great way to serve a meal in one dish, with little mess and cleanup. This macaroni and meat casserole recipe came from my Cajun mother-in-law, and we have adapted it for our rushed lifestyle. This recipe is not in exact measurements or quantities, because Cajun cooking is an art, not a science. Make the quantity you want, and adjust to suit your family.

Instructions

Things You'll Need:

  • A package or two of frozen hamburger meat base from recipe in resources
  • A package or a part of a package of macaroni pasta
  • Two or three small cans of tomato sauce
  • Salt, pepper, Cajun spice, Tabasco sauce, flour
  • A can of cut corn, drained
  • cheese slices or Velveeta
  1. Step 1

    Cook the macaroni pasta in a large pot of water with a little salt. Drain.

  2. Step 2

    While the macaroni is cooking, put the meat packages in the microwave for one minute to thaw just enough to break the cooked meat apart.

  3. Step 3

    Place about a tablespoon of flour in the bottom of a large measuring cup and mix a couple of tablespoons of tomato sauce. Add all the tomato sauce and a dash or two of Tabasco or steak sauce if you prefer. Add salt and pepper and Cajun seasoning to taste. Add enough water (or the juice from the corn) to make about three cups of liquid--or more if you are making a large quantity.

  4. Step 4

    Place the macaroni in a casserole dish. Add the crumbled meat and drained can of corn. Add the tomato sauce mix. Stir well. Distribute cheese slices or grated cheese evenly on top.

  5. Step 5

    Bake in oven at 350 degrees for about an hour.

Tips & Warnings
  • We use Tony's Creole or Cajun Seasoning from Tony Chachere. It's HOT, so do not use much until you are sure you like it.
  • You can make this to your liking. If your family does not like much tomato, use less.
