How to Make a Basic Cheese Soufflé

Soufflé are very elegant and impressive. The key is the beaten egg whites.

Instructions

Things You'll Need:

  • 1/4 cup of flour
  • 1/4 cup of butter
  • 4 egg yolks
  • 1 1/2 cups grated cheddar
  • 1 1/2 quart soufflé dish or a deep baking dish
  • aluminum foil
  1. Step 1

    Preheat your oven to 350 degrees.

  2. Step 2

    Next, you will need to make your white sauce. First melt two tablespoons of butter over low heat. Then stir in two tablespoons of flour; cook. You will need to stir this constantly until it becomes frothy. But do not let it turn brown. This should take about 2 or 3 minutes. Gradually add 1 cup of hot milk, stir briskly until blended well. Bring to a boil and then reduce the heat to the lowest sitting. Allow to simmer 4 to 6 minutes stirring occasionally.

    Allow the white sauce to cool slightly.

    beat in 4 eggs, one at a time.

  5. Step 5

    Add 1 1/2 cups grated cheddar and stir slowly.

  6. Step 6

    Set the sauce to the side. And beat 4 egg whites until stiff. Then fold them into the sauce.

  7. Step 7

    Pour the mixture into a buttered 1 1/2 quart soufflé dish.
    Bake 35 to 40 minutes until it is puffy and golden.
    It should still be a little creamy in the center.

Tips & Warnings
  • Serve your soufflé right away before it has a chance to fall.
  • For a seafood or meat soufflé, eliminate the cheese and add 1 1/2 cups of minced tuna, ham or chicken.
