How to Cook Rolled Beef

Rolled beef can be cooked with several different recipes. Once you learn the basic cooking method, you can use your imagination to create different fillings. One of the most tender cuts of beef to use is skirt steak. It is threaded with flavorful fat and is more tender than most cuts. You can also select flank steak. Flank has less fat but is very tender and has good beef flavor.
One of the most popular ways to cook rolled beef involves stuffing pounded beef and braising in a rich tomato sauce. This roasting method produces a moist rolled beef dish that will have everyone asking for the recipe.

Instructions

Things You'll Need:

  • 3 lbs. Skirt or Flank Steak
  • Meat Mallet
  • Cutting Board
  • Kosher Salt
  • Fresh Ground Pepper
  • Kitchen String
  • Tomato Sauce
  • Stockpot with Lid
  1. Step 1

    Lay the beef on a cutting board. Pound steak to about 1/4-inch thinness.

  2. Step 2

    Season the beef with a teaspoon of kosher salt and fresh ground pepper on both sides.

  3. Step 3

    Loosely roll the beef into a solid roll. Cut three pieces of kitchen string each about 10 inches long. Make sure these strings are long enough to go around the circumference of the beef.

  4. Step 4

    Tie the beef in three places around the circumference to hold the roll in place. Space out the strings about two to three inches apart.

  5. Step 5

    Fill a large stock pot with four cups of your favorite tomato or spaghetti sauce. Place the tied beef into the sauce, place the lid onto the pot and let the sauce simmer over medium high heat for 45 minutes.

  6. Step 6

    Remove the beef roll from the simmering sauce and place on a cutting board. Slice into individual servings, remove kitchen string and serve topped with the tomato sauce.

Tips & Warnings
  • Consider stuffing the beef before simmering in the tomato sauce. Mix stuffing ingredients and spread on the beef before rolling. Italian stuffing: 1/2 cup bread crumbs, 1 garlic clove minced, 1/4 cup minced onion, 1/4 cup minced mushroom, 1/4 cup minced parsley, 1 tablespoon rosemary chopped, 1/4 cup Parmesan cheese. Cheese stuffing: 1 container of garlic and herb cheese spread, 1/4 cup Parmesan cheese, 1/2 cup minced onion, 1 teaspoon chopped parsley.
  • Use a meat thermometer to check the temperature of the cooked beef. Beef should be cooked to 145 degrees Fahrenheit before serving.
