Grain foods include breads, cereals, pasta, grits, oatmeal, popcorn, tortillas, crackers and couscous. They are made from either refined or unrefined grains, including wheat, rice, barley, rye, corn and soybeans. Multigrain foods use combinations of two or more grains, the healthiest of which are whole grains and flours made from them.
The true beauty of multigrain foods is the sheer variety of ingredients, which endows them with versatility and flavor, not to mention fiber. This multigrain bread is bold, hearty and delicious. Try a thick slab of it toasted and spread with peanut butter. It's very quick and easy to prepare using a bread machine.

Instructions

Things You'll Need:

  • Whole wheat flour Bread flour Soy flour Cornmeal Cracked wheat cereal Uncooked oatmeal Flax seeds Salt Nonfat dry milk Butter Molasses Water Dry yeast

    The Steps

  1. Step 1

    Measure very carefully and add to your bread machine pan 1¾ cups whole wheat flour, 2 cups bread flour, 2 Tbsp. soy flour, 2 Tbsp. cornmeal, 2 Tbsp. cracked wheat cereal, 1 Tbsp. uncooked oatmeal, 1 Tbsp. flax seeds, 2 tsp. salt, 2 Tbsp. dry milk.

  2. Step 2

    Add 2½ Tbsp. butter, 2 Tbsp. molasses, 1-11/16 cups water.

  3. Step 3

    Close the bread machine's lid. Pour 1½ tsp. dry yeast into the yeast dispenser.

  4. Step 4

    Plug the machine in and set it to bake a whole wheat loaf, and start the machine.

  5. Step 5

    Remove the pan of multigrain bread from the bread machine according to the manufacturer's instructions. Cool for at least an hour on a wire rack before slicing. Store the multigrain bread for up to 4-5 days in a plastic bag.
