Examine the knife you want to sharpen under bright lighting to find any nicks or dullness. Make sure the knife needs sharpening before putting it through sharpener. Sharpening a knife that is in perfect condition could wear the edge of the blade too thin.
Insert the knife into the pre-sharpening slot in order to grind the edges of the tip of the knife. Slowly turn the knife every two seconds to grind the sides of the tip.
Pull the whole knife through the pre-sharpener slowly at first and then repeat pulling it through the sharpener faster each time. Depending on the dullness of the knife you should only have to pass it through the pre-sharpener about five to seven times.
Pull the knife through the sharpener with the diamond coated disks to complete the sharpening process. Pull the knife through the sharpener away from your body and catch all edges and sides like you did with the pre-sharpener. You should only need to pull the knife through the main sharpener one to three times, depending on the dullness of your knife.
Place the knife in the polisher slot and slowly pull the knife through the slot until it's as shiny as you'd like. Examine your knife once again in bright light to make sure that you have removed the nicks and wear that was originally on the knife.
Tips & Warnings
- The pre-sharpening slot removes metal by grinding, and the main sharpening slot is even more aggressive in removing metal inconsistencies. You may not need to use the main sharpener if your knife is already well sharpened after going through the pre-sharpening slot.
