How to Make Summer Salad with Mandarin Oranges Romaine Lettuce and Almonds

Are you tired of the same old tossed salad every night? Try this Mandarin orange and almond salad to change things up a bit. This is a great summer salad, but can be served year round as a side salad with dinner, or as an entree' for lunch. An excellent accompaniment with chicken or fish. We like it with hamburgers in the summertime.

Instructions

Things You'll Need:

  • 1 large head of Romaine lettuce
  • 1 15 oz. can of Mandarin oranges, drained (reserve 2 tbsp.)
  • 1/2 cup of sliced almonds
  • 1/4 cup sliced red onion
  • apple cider vinegar
  • olive oil
  • salt & pepper
  • large salad bowl
  • cutting board
  • chef's knife
  1. Step 1

    Cut bottom and top off the head of Romaine lettuce and discard. Vertically cut head of lettuce in half. Wash under cold running water. Shake off excess water and let drain.

  2. Step 2

    Open can of Mandarin oranges, reserve 2 tablespoons of liquid and discard the rest. Peal and slice 1/4 cup of red onion, place in salad bowl.

  3. Step 3

    Chop or tear lettuce into bit size pieces, place in salad bowl. Add Mandarin oranges to bowl. Add salt and pepper to taste.

  4. Step 4

    In a separate bowl or large measuring cup add oil, vinegar and reserved juice from oranges, whisk until dressing is well blended. Add to salad and toss well. Top salad with sliced almonds and enjoy.

Tips & Warnings
  • Most of us usually have Romaine lettuce and a red onion (or other variety) in the refrigerator. If you keep a can of Mandarin oranges and bag of sliced almonds in your pantry, you can make this salad anytime. It is a great go to when you have unexpected company and need to serve something a little special.
