How to Make Healthy Shish Kabob on the Grill

It's 4th of July and it's time to get out the BBQ and grab those burgers, hotdogs and buns. Or it it? You can have the traditional 4th of July fare or you can go healthy by eating shikabob made from hormone free, organic chicken, fruit, and vegetables. Here is a recipe of a friend of mine came up with that is sure to please a crowd.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Chicken breast
  • Garlic
  • Grated ginger root
  • Lemon or lime juice
  • Rice wine vinegar
  • Honey
  • Pureed strawberries
  • Sesame oil
  • Green pepper
  • Sweet onions
  • Large pineapple chunks
  • Cherry tomatoes
  • Strawberries
  • Red and black pepper
  • Cilantro
  • Grill
  • Skewers
  • Charcoal or gas
  1. Step 1

    Marinate 2”-3” chunks of skinless chicken breast meat in the following ingredients for 2 hours:
    Garlic, grated ginger root, lemon or lime juice, rice wine vinegar, pureed strawberries, honey, red and black pepper, and a little sesame oil and soy sauce.

  2. Step 2

    Skewer chicken alternately with green peppers, sweet onions, large pineapple chunks and cherry tomatoes.

  3. Step 3

    Arrange on flat pan and refrigerate until ready to grill. Before grilling brush kabobs with marinade.

  4. Step 4

    Grill over low coals until internal temperature of the chicken is 160 degrees. Serve with curried rice. Garnish with extra fruit, strawberries and cilantro. Add extra marinade to the top....Yum Yum!

Tips & Warnings
  • Let the coals die down a bit so that you don't have charred shish kabob.
  • Internal temperature of chicken should be 160 degrees or cut into the meat to make sure it is done.
  • Never grill indoors.
