How to Cook Beef Eye

Beef eye, or "rib eye" as it is more commonly known as, is a very flavorful and tender cut of meat.The eye of round is a cut from the round steak section of a beef hind quarter. The rib eye is usually sold as either as a boneless roast or steak. This is one of the most tender steaks that come from a cow. Roasting is one of the most popular ways of cooking a beef eye. The recipe in this article can be executed by both the novice and experienced cook.

Instructions

Things You'll Need:

  • Roasting pan Olive oil 1 beef rib eye roast, about 3 to 4 lbs. 1 tsp. kosher salt 1 tsp. fresh ground black pepper 1 tsp. dried thyme 1/4 cup Dijon mustard 3 tsp. horseradish
  1. Step 1

    Preheat the oven to 350 degrees F.

  2. Step 2

    Let the "eye" sit out for an hour on your kitchen counter on a dish to bring it to room temperature. This will promote even cooking.

  3. Step 3

    In a small bowl, mix kosher salt, pepper and thyme.

  4. Step 4

    Briskly rub this herb mixture all over each side of the beef.

  5. Step 5

    Place the beef with the fattier side facing up and roast at 350 degrees F for about 1 hour.

  6. Step 6

    Mix the Dijon mustard and horseradish and spread it all over the beef.

  7. Step 7

    Place the eye back in the oven for 25 minutes longer or until the internal temperature of the roast is about 145 degrees F on a meat thermometer. This recipe feeds up to eight people.

Tips & Warnings
  • Add your favorite herbs to your herb rub for a different variation to this recipe. Try adding dried oregano or coriander.
  • Cooking beef under 145 degrees F may increase the risk of food-borne illnesses.
