Hot chocolate is the ultimate comfort drink. As inexpensive as it is to make from scratch, it's even less costly and easier to prepare when using powdered instead of fresh milk. In addition to being less expensive, powdered milk has a much longer shelf life. It's convenient to always have some on hand so hot chocolate can be spontaneously served anytime, whether at breakfast on a cold winter morning or when unexpected guests arrive during the holidays. Instructions

      Put 1 tsp. sugar and 1 rounded tsp. cocoa powder in a mug. Combine the sugar and cocoa powder with a spoon.

      Add 2 tsp. water to the cocoa mixture. Stir until the sugar and the cocoa are completely combined and the mixture reflects light. If it won't combine and seems dry, add more water---about 1/4 tsp. at a time---until the mixture will combine and reflect light.

      Add 1/3 cup powdered milk. Stir into the sugar and cocoa mix.

      Fill the mug with water until the mug is filled to 1 inch from the top; stir the mixture once again.

      Microwave on high for 1 minute and 30 seconds. Heating the hot chocolate in 30-second increments is reasonable---it will allow you to check that the hot chocolate is heated and well mixed but isn't hot enough to boil over.

Tips & Warnings

  • Feel free to add more cocoa or sugar, or adjust the ratio, to taste. Sprinkle a little cinnamon, nutmeg or more cocoa on top for extra flavor. Add whipped cream or marshmallows on top for an added treat. Add 1 to 2 tsp. instant coffee to make a mocha. If a microwave isn't available, make the hot chocolate in a pot on the stovetop.

  • Be sure to use a microwave-safe mug.
