How to Use Shiitake Mushrooms

Shiitake mushrooms are recognized by their smokey, rich flavor and can be found in most grocery stores as either fresh produce or in a can. Shiitake mushrooms originated in Asia, where they have been cultivated for more than 2,000 years, but it has only been in since the mid-1900s that they have been sold commercially. Now, many farms in the United States cultivate them as well. Due to their rich flavor, shiitake mushrooms are a great addition of protein to vegetable stir fry dishes. Does this Spark an idea?

Things You'll Need

  • Large skillet or wok Oil Broccoli florets, 1 cup Cauliflower florets, 1 cup Carrots, shredded, 1/2 cup Onion, thinly sliced Green bell pepper, thinly sliced Yellow bell pepper, thinly sliced Shiitake mushrooms, sliced, 1 cup Rice, 2 cups, cooked Ginger, 1 teaspoon Salt and pepper Soy sauce

Instructions

      Drizzle oil into the pan or wok, covering the bottom of the pan.

      Add the broccoli and cauliflower florets to the oil and stir fry for at least 5 minutes.

      Add the onions, carrots, green bell pepper, and yellow bell pepper to florets and stir fry until all vegetables are tender.

      Add the mushrooms and ginger to the vegetables and continue to stir fry until the mushrooms are tender.

      Add cooked rice to the vegetables. Season with salt and pepper.

      Drizzle soy sauce over the top of the mixture and toss to coat.

Tips & Warnings

  • Avoid rubbery mushrooms by not overcooking them.
