Instructions

    • 1

Select the snap peas that are large, tender and unbruised. Use a knife to trim their strings, and wash thoroughly.

    • 2

Place a pot of water on the stove and bring to a boil. You'll want enough water to cover the snap peas you're planning to freeze. Once the water is boiling, throw in the snap peas.

    • 3

Blanch the peas in the boiling water for 90 seconds. Then pour the pot's contents through a strainer and let cool water run over the snap peas. Drain them.

    • 4

Lay the snap peas on layers of paper towels to dry. Pack them into plastic Ziploc bags, leaving about 1/2 inch headroom.

    • 5

Seal the bag shut securely, then freeze. When you need them, place the snap peas in a strainer and pour boiling water over them to thaw them out immediately and perfectly.
