How to Cook Round Beef Top

Round beef top, also known as top round, is the portion of the beef that comes from the upper hindquarter of a cow. From the round cut, further cuts can become roasts, steaks or burgers. Round beef top generally is well marbled, meaning it has a good fat content, which makes it suitable for many type of cooking methods. Stews and braising is not recommended for this type of beef cut, as the fat cannot drain from the meat.

  1. Step 1

    Roast round beef top in the oven. Place the roast in a roasting pan and add 1/4 inch of water. Add vegetables such as carrots, potatoes and onions, if desired. Place the lid on the pan and roast in an oven at 250 degrees for 2 to 3 hours or until the meat has reached the desired temperature. Use a meat thermometer to test; rare will read 140 degrees, medium meat is 160 and well done reads 170.

  2. Step 2

    Brown a top round roast in a few tablespoons of oil in a skillet on the top of the stove. Place the browned roast in a large slow cooker and cook for 6 to 8 hours. Add vegetables, if desired.

  3. Step 3

    Fry round beef top burgers in a skillet on the stove until well done.

  4. Step 4

    Grill both burgers and steaks on a grill. Burgers should be cooked well done; steaks can be cooked to preference.

  5. Step 5

    Broil steaks in the oven. Place steaks in a single layer on a broiler pan. Season as desired. Turn your oven control knob to broil and place the steaks under the broiler. Cook until the desired doneness is achieved, turning the steaks over once during the cooking process. A half-inch top round steak should be turned after 2 to 3 minutes if cooked rare.

Tips & Warnings
  • Beef burgers should always be cooked well done to kill any bacteria that may be in the meat. Always store beef in the refrigerator until ready to cook. Thaw frozen round beef top in the refrigerator, microwave or in a cold water bath. Use the meat as soon as possible. Round beef top can be cut into chunks and used for shish kabobs. When your local grocery has round beef top roasts on sale, have the butcher cut the meat into desired sizes or have them grind the meat into burger. Most grocery stores will do this for free.
