How to Make Vegetarian Green Bean Stew

Green bean stew, or lubyee, is a great tasting, filling middle eastern dish. Although it can be cooked with lamb, it is just as good served as a vegetarian dish - and is a healthy recipe that adds vegetables to your diet!

Makes 4 servings

Prep Time: 5 minutes
Cooking Time: 10 minutes with canned green beans, 15 with fresh

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 large onion, chopped
  • 2 cloves garlic, crushed
  • 4 mid-sized tomatoes, chopped
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon paprika
  • 1/4 cup oil (preferably oilve, but any will do)
  • Salt and pepper to taste
  • 4 cups green beans, fresh or canned
  • Saucepan
  1. Step 1

    Heat the oil over medium. Add the onions, garlic, paprika and cinnamon and stir periodically until the garlic and onions are clear.

  2. Step 2

    Add the tomatoes and, if using fresh green beans, green beans, with ends removed. Cook until the tomatoes are soft, adding water as necessary to maintain a slightly soupy mixture. If using fresh green beans, continue cooking until the green beans are soft.

  3. Step 3

    Add the canned green beans, if using, and salt to taste. Turn the heat to low and cook until the green beans are warmed through - this should only take a minute or two.

  4. Step 4

    Serve with bread, pita, or rice.

Tips & Warnings
  • For a little extra kick, add 1/4 teaspoon chili powder to the green beans.
