How to Make Oat Flour Pancake Mix

Want a nice, easy alternative to wheat or white flour pancake mix? This gluten free recipe will put you on the right path.

Instructions

Things You'll Need:

  • 12 cups oat flour
  • 1/4 cup baking powder
  • 1.5 tsp salt
  • 1 tsp fructose or 1/2 tsp sugar
  • 1 gallon size zippy bag
  1. Step 1

    Grind oat flakes in the blender or food processor until it is flour-like.

  2. Step 2

    Mix all the ingredients in the zippy bag, thoroughly. Label the bag and you are done!

  3. Step 3

    When you are ready to make your pancakes, in a bowl, mix together:
    1 egg, whisked
    ½ cup almond, soy, rice, or regular milk
    ½ cup water

    Then add 1 cup mix. Let the batter sit for about 3 to 5 minutes. Yes, it will be thick.

  4. Step 4

    Put a little corn oil in a skillet on medium low heat. Ladle in batter and cook on one side until round air holes appear on the top side. Do be patient, because it takes a while. Flip the cake over for a short while to lightly brown the second side.

  5. Step 5

    This is best served with blueberry or strawberry sauce which is made by mixing together:

    Fruit Sauce
    1 cup water
    1 Tbs cornstarch
    ½ to 1 ½ cup blueberries or strawberries
    Sweetener of choice (honey, agave nectar, fructose, etc.)
    Bring the mixture to a slow boil over medium heat while stirring. Store the remaining sauce in the refrigerator.
