- fresh rice from the microwave
- ground meat cooked with celery and onion
- cheese slices or Velveeta cheese

We cook ground meat and freeze it, then thaw a pack in the microwaveCook the ground hamburger meat with chopped celery and onion. You are making the meat for Cajun rice dressing or dirty rice, and this is the stuffing for the bell peppers. I make this meat base in five-pound quantities, cook until well done, and freeze it in half-pound packages, since I am cooking for two. Cook rice with a little salt in the microwave. I use a microwave rice cooker and it takes 17 minutes to cook three cups of rice to perfection. You will need about two cups for half a pound of cooked ground meat.

Two bell peppers can make 4 servingsClean the bell peppers and put in a microwave-safe dish. Add a little water and the lid, and put in the microwave for 3-4 minutes. Open the lid and check to see if they are steaming, turn them over if you need, and cook a few more minutes until they are "floppy" done and good to eat--not crispy.

Mix meat and rice with Cajun seasoning to tasteMix the meat and rice, and add Cajun seasoning. We use Tony Chachere's Creole Seasoning for stuffed bell peppers. Fill the bell pepper halves with the rice mixture.

Red Bell Peppers are sweet!You will probably have rice mixture left over. Place that all around the peppers to fill the dish, and put cheese on top. Cook Cajun stuffed bell peppers in the oven to melt the cheese and blend the flavors, but you have everything already cooked in the microwave. You did it!
