Fruit cobbler adds a warm counterpart to any savory meal. Use fresh summer fruit, such as peaches, blueberries or strawberries, as a summertime treat or fall favorites, such as apples or pears, for a sweet end to a hearty winter meal. Top it with vanilla ice cream or whipped topping and enjoy. Select any fruit or try a combination of fruits, such as a berry mix of blueberries, cherries and strawberries, as the filling. Things You'll Need

  • 8-by-8-inch baking dish
  • Nonstick spray
  • 2 1/2 cups fresh or frozen fruit, thawed
  • 2 tbsp. all-purpose flour
  • 1/2 cup sugar
  • 1 tsp. vanilla extract
  • 1 tbsp. lemon juice
  • 1/8 tsp. cinnamon
  • 2 tbsp. melted butter
  • Mixing bowl
  • 1 3/4 cup all-purpose flour
  • 3 tsp. baking powder
  • 5 tbsp. butter, diced
  • 1 cup lowfat milk

Instructions

      Preheat oven to 350 degrees.

      Spray baking dish with nonstick spray. Pour fruit, lemon juice, 1/2 cup sugar, vanilla, lemon juice and melted butter into baking dish. Mix well. Slowly add 2 tbsp. flour and cinnamon. Mix well.

      Mix together remaining flour and baking powder with sugar in separate bowl.

      Add chopped butter and milk. Stir well with fork to work into the dry ingredients.

      Spoon or pour batter over fruit mixture. Sprinkle top with sugar, if desired.

      Bake cobbler at 350 degrees for 40 to 50 minutes or until a knife inserted through the crust comes out clean.

Tips & Warnings

  • if using frozen fruit, place in a strainer and let thaw for about 30 minutes.

  • Some fruits make require longer cooking than others; apples take longer than berries.
