Fruit cobbler is a perfect summertime treat. Top it with vanilla ice cream or whipped topping and enjoy. Any fruit can be used in this simple recipe or try a combination of fruits for a tasty treat. Blueberries and cherries make a great filling.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • FOR FILLING
  • 2 1/2 cups fresh or frozen fruit
  • 2 tbsp all purpose flour
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • pinch of cinnamon
  • 2 tbsp melted butter
  • FOR CRUST
  • 1 3/4 cup all purpose flour
  • 3 tsp baking powder
  • 5 tbsp butter diced in small pieces
  • 1/2 cup sugar
  • 1 cup low-fat milk
  1. Step 1

    Preheat over to 350 degrees.

  2. Step 2

    Prepare an 8x8 square baking dish by spraying with non-stick spray. Pour fruit, lemon juice, 1/2 cup sugar, vanilla, lemon juice and melted butter into baking dish and mix well. Slowly add 2 tbsp of flour as well as cinnamon and mix again.

  3. Step 3

    In separate bowl mix together remaining flour and baking powder with sugar.

  4. Step 4

    Add chopped butter and milk and stir well. (If you don't want to pre-chop the butter you can use a pastry tool or fork to work it into the dry ingredients.)

  5. Step 5

    Spoon or pour batter over fruit mixture. Spinkle top with sugar if desired.

  6. Step 6

    Bake at 350 degrees for 40-50 minutes or until a knife inserted through the crust comes out clean.

Tips & Warnings
  • if using frozen fruit, place in a strainer and let thaw for about 30 minutes before you start
  • make sure you pre-heat your oven to the required temperature
  • some fruits make require longer cooking than others (apples take longer than berries)
