I used to make pimento cheese for my husband often; it was so messy and you were left with a nasty food processor to wash. And, it was hit or miss ... sometimes it would be so runny, it looked like pimento pudding.

This way is so much quicker and the end result is the same every time, and much better, I will say! I will NEVER be able to pawn off store bought pimento cheese on my family again. And, when it is this quick to do, who needs to?

Instructions

Things You'll Need:

  • Two packages of shredded Sharp cheddar cheese.
  • One large jar of pimentos. (They usually come in two sizes.)
  • Mayonnaise, around 1/2 cup.
  • Salt and pepper.
  1. Step 1

    Dump the Cheese in a bowl.

  2. Step 2

    Add the whole jar of pimentos, juice and all. Very Lightly stir, but don't smush the cheese up very much. You want some texture. You want people to know you know how to make pimento cheese!

  3. Step 3

    Add the Mayonnaise a little at a time until you get the consistency you think your family would like. Some folks are not wild about mayonnaise, so 1/4 cup may be enough. It is very dry at 1/4 cup; we like more. Add a generous amount of salt and pepper, cracked pepper if possible. Don't leave out the salt and pepper because it is quite important for some reason.

  4. Step 4

    Mix and refrigerate. This is so good on so many things. I like it on crackers; my husband eats a sandwich. My mother likes it on celery or on a sandwich with meat added. Once you make quick pimento cheese, you will never want anything else.
