To cook a perfect steak in the oven, you must start with the right cut of meat. Buy a ribeye, T-bone or Porterhouse steak that is at least one inch thick. To complete the perfect steak, you must season it correctly and place it in the right position in the oven for the right period of time.

    • Broiling pan
    • Salt

        Rub both sides of the steak with a generous amount of olive oil to help the spices attach to the steak. This will give the steak a beautiful brown color and prevent it from sticking to the pan.

        Season the steak with salt and pepper to taste. If you are a snob for flavor, use sea salt and freshly ground pepper. This is the only seasoning necessary on a good cut of steak. Anything else will mask the taste of the steak.

        Place the steak in a broiling pan and place it under the broiler for three minutes per side or until the outside is browned.

        Drop the steak down to a lower rack and let it cook for 10 more minutes for rare, 12 minutes for medium rare and 15 minutes for medium well.

        Allow the steak to sit at room temperature for at least five minutes before cutting into it to allow the juices to settle and flavors to enhance. Cut the steak against the grain to loosen the fibers, which provides more tender meat.

    • Cook the steak only when it is at room temperature. A cold steak will not cook properly. Leave a refrigerated steak out for at least a half hour before cooking it.
