How to Make Ice Cream Bars

Ice cream bars are a deliciously cool treat. Traditionally, ice cream bar flavors are limited to what's offered in stores. However, making your own ice cream bars opens you up to a whole new world of flavor combinations. Instructions

      Transfer a container of ice cream to a bowl. Blend the ice cream with an electric hand mixer for about a minute, or until it's soft and spreadable.

      Fill small paper cups with the softened ice cream. Make sure to pack the ice cream into the cups so there aren't any air holes or gaps in the bottom. Cover each cup with a piece of plastic wrap secured with a rubber band. Stick a popsicle stick through the plastic wrap into the center of each ice-cream-filled cup, then sink the stick about 1 inch into the ice cream.

      Place the cups on a level surface in the freezer and chill for about 24 hours.

      Cover a cookie sheet with wax paper. Melt chocolate in a double-boiler, then set it aside to cool slightly. When the chocolate has cooled to a thick, pasty consistency, remove the frozen ice cream bars from the freezer and place the cookie sheet on the shelf where they sat.

      Unwrap the first ice cream bar, removing the plastic wrap and tearing away the paper cup. Apply the melted chocolate quickly and evenly to all sides of the ice cream bar with a rubber spatula. Immediately place the ice cream bar on the cookie sheet in the freezer. Repeat with all the rest of the bars.

      Allow the ice cream bars to remain in the freezer until the chocolate is frozen, about 20 to 30 minutes. Serve frozen.

Tips & Warnings

  • If you have a set of plastic or silicone popsicle molds with attachable sticks, you can use those instead of the paper cups and popsicle sticks.
