Cinnamon rolls are sticky, sweet, doughy and delicious. The rolled pastry, filled with cinnamon and sugar and topped with a white sugar glaze, is a satisfying solution for a sweet craving, but it is full of empty calories. One way to up the nutritional factor of cinnamon rolls is to substitute nutrient-rich whole wheat flour for the unbleached white flour that contains no nutritional value.

Instructions

Things You'll Need:

  • Dry yeast Milk Sugar Unsalted butter Salt Eggs Whole wheat flour Brown sugar Ground cinnamon Powdered sugar Cream cheese Vanilla extract
  1. Step 1

Warm 1 cup of milk in a saucepan or in a microwave. Dissolve 1/4 oz. of dried yeast into the milk, stirring thoroughly.

  2. Step 2

Mix together the dry ingredients: 4 cups of whole wheat flour, 1/2 cup of sugar and 1 tsp. of salt.
In an electric mixer, add the milk and yeast, followed by 1/3 cup of softened butter and two eggs. Switch to the kneading hook attachment. Slowly incorporate the dry ingredients into the wet ingredients, keeping the electric mixer on low. Knead the dough until it forms into a ball.

  3. Step 3

Lightly flour a clean, dry surface. Transfer the dough to the surface and knead the dough for two minutes. Put the dough in a bowl, cover with a towel, and leave in a warm place for an hour, until it rises, doubling in size.

  4. Step 4

Preheat the oven to 400 degrees Fahrenheit. Roll out the dough to 21 by 16 inches in diameter.

  5. Step 5

Soften 1/3 cup of butter until it's spreadable. Spread the butter across the dough. Combine 1 cup of brown sugar and 2 1/2 tbsp. of ground cinnamon, and scatter it evenly on top of the butter.

  6. Step 6

Roll the widest part of the dough, swiss roll style, so you end up with a long log. Cut the log into 1 3/4 inch pieces, and lay the pieces onto a greased baking sheet. Bake for 10 minutes and transfer to a cooling rack.

  7. Step 7

Mix the icing ingredients together: 8 tbsp. of butter, 1 1/2 cups of powdered sugar, 1/4 cup of cream cheese, 1/2 tsp. of vanilla extract and a pinch of salt. Drizzle icing evenly over all of the whole wheat cinnamon buns. Serve.
