How to prepare Honey Curry Chicken

This article is for Honey Curry Chicken ~ an easy to make and tasty dish that your whole family is sure to enjoy ~ even your picky eater will enjoy this dish (mine does!)!

Difficulty: Moderate
Instructions

Things You'll Need:

  • 1/2 C butter or margarine
  • 1/2 C honey
  • 2 1/2 TBSP mustard
  • 1 1/4 tsp salt
  • 1 1/4 tsp curry
  • 2 - 3 lbs of chicken (breasts, thighs, drumsticks...your choice)
  1. Step 1

    Combine all ingredients except the chicken pieces in a sauce pan. Set the temperature to a low heat. Stir constantly until butter melts. Do not allow to boil or sauce may scorch!

  2. Step 2

    Arrange chicken pieces in a 13x9" baking pan with the bigger pieces on the outside. Pour the sauce over the chicken and cover the pan with foil. Place the pan in the refrigerator. Marinate 4 hours or more. The longer you marinate the chicken, the better it will taste!

  3. Step 3

    Preheat oven to 350 degrees. Uncover the pan and bake in the oven for 1 - 1 1/4 hours until the chicken has turned a nice golden brown. Be sure that the internal temperature of the chicken reaches 170 degrees. Basting is a must!

Tips & Warnings
  • The pan drippings are especially good served over nice fluffy white rice!
  • The longer you marinate, the better! I like to let it marinate overnight!
  • Be sure to check internal temperature with a meat thermometer to ensure that it has cooked enough.
  • Use caution when removing from the oven - pan will be very hot!
