Pickled squash is like a relish and it's absolutely delicious. It can be eaten on the side of the main course or scooped on crackers and eaten.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 8 cups chopped yellow squash, 2 cups chopped onions, 2 bell peppers 1- green and 1- red chopped, 2 tsp. mustard seed, 1 tsp. salt, 2 cups white vinegar, 2 tsp. celery seeds, pepper to taste, 3 cups su

    Purchase your pint jars or clean your old ones really well.

  2. Step 2
     

    You will need to purchase new rings and lid flats, never use the old ones.

  3. Step 3

    Purchase the rest of your ingredients.

    Pick your squash, peppers and onions if you are growing them. Fresh is best, but store bought will be fine.

    Wash all vegetables ,but do not peel.

    Chop all the vegetables up in very fine small cubes. You can use a food processor it you like.

    Combine squash, onions and salt in a bowl mix well.

    Let this sit for 2 hours and then drain well. About 15-20 minutes before the 2 hour mark boil 6 pint jars with lids in large pot or canning pot. If you don't have a large enough pot to boil them all use to medium size pots.

    Combine vinegar, sugar, and spices in pot and bring to a good hard boil right before you are ready to place in jars.

    Combine squash mix and vinegar mix together and stir well.

    Sit jars out and spoon squash mixture into each jar. Fill right below ring or jar.

  12. Step 12

    Sill lids tightly and listen for them to pop. You will not always here them, but you will know by checking to to see if they are indented down in the center and not popped up in the center. If they are popped up in the middle they have not sealed and you must throw them out.

Tips & Warnings
  • Date the top of each jar with a date so you know when they are ready and also how long they have been canned for.
  • Be very careful when removing jars from boiling water. Use tongs and a pot holder or a rag to remove. And a hot towel or pot holder when touching them while filling them and screwing on the lids.
