How to Cook a Texas Style Smoked Brisket

I love smoking a Brisket for a large crowd, and here in Texas we have alot of BBQ's so we smoke alot of Briskets!
Here is my recipe for a crowd pleasing Holiday weekend Brisket.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 8-12 lb Beef Brisket
  • Seasoning rub ( see recipe)
  • 1 Bottle Italian Dressing
  • Aluminum Foil
  • Large Foil pan
  • Smoker, electric, LPgas, or charcoal
  • Wood chips or chunks, Pecan, apple, mesquite.
  1. Step 1

    Purchase 1 large Beef brisket.
    TIP: When the brisket is cold and in the package try Bending it, if it bends easily it is a good one, if not, try another.

  2. Step 2

    1 day in advance;
    Remove Brisket from Store packaging, and place in large foil pan. Pour Italian dressing over entire brisket liberally, use the whole bottle.
    Place in refrigerator covered, for 4-6 hours, or preferably overnight

  3. Step 3

    Mix seasoning rub together:
    1 TBSP Garlic Powder
    1 TSP Salt
    1 TBSP Onion Powder
    1 Tsp celery salt
    1 TSP red pepper ( cayenne), optional
    1 TBSP coarse Black Pepper
    Mix together in small bowl, and put aside for later

  4. Step 4

    Heat smoker, while smoker is heating place wood chunks or chips in Warm water to soak. Fill water pan with water, set aside. ( add 1 12oz beer of your choice to water pan for extra flavor)

  5. Step 5

    Rub Brisket all over with seasoning rub, apply it liberally. Don't be afraid!

  6. Step 6

    Place in smoker, and assemble smoker per manufacturers directions. Cook for 12-16 hours . Check on it every few hours, and add more wood chunks when it stops smoking.

  7. Step 7

    When brisket is done, slice and enjoy with potato salad or your choice of sides.

Tips & Warnings
  • Add 12 oz beer to water pan for added flavor
  • Cool brisket before slicing
  • Smokers are hot, be careful
