How to Make Easy Healthy Soups

Eating soup is a great way to start eating healthy. A study from Pennsylvania State University showed that eating soup before a meal helped people eat 100 fewer calories during the meal itself. Best of all, soups can also be cheap and easy to make.

Instructions

    • 1

Choose your base. You can use chicken, beef, or vegetable broth from a can, or you can mix bouillon cubes with water and boil. In either case, make sure to choose a healthy base that does not include MSG.

    • 2

Choose fresh vegetables that are in season, buying them at a local farmer's market if possible. These vegetables will have the best taste.

    • 3

Boil the vegetables in the broth. Add the tougher vegetables (e.g., onions) first, and the easily cooked vegetables (e.g., sweet potatoes) last.

    • 4

Add a can of beans (e.g., kidney, black, pinto).

    • 5

Add dried herbs near the end of the cooking time. If you are using fresh herbs, add them with the vegetables. Using herbs can cut down on the amount of salt you'll add to your soup, which will make it healthier.

Tips & Warnings

  • Sprinkle Parmesan or mozzarella cheese on top of your soup, if desired. Consider serving with whole wheat croutons or a slice of whole wheat bread. You may want to make a large batch of soup and freeze it in smaller portions for later.

  • Do not add a lot of herbs at once. Instead, add a bit and then taste the soup, adding more if necessary.
