How to Brew Sencha
Sencha is a traditional Japanese green tea valued for its sweet flavor and nutty, grassy notes. Sencha is dark green in appearance and characterized by tightly rolled, needle-shaped leaves. Sencha is a young tea, picked early to produce a blend of sweet and astringent properties. Because of this delicate balance, it can be a difficult tea to properly brew, often resulting in a bitter cup of tea lacking the distinctive earthy notes. Things You'll Need
- 1 ½ tsp. high-quality sencha tea Teakettle Water, filtered or distilled is best Teapot, preferably earthenware

Brewing the Tea

Boil the water in a teakettle. Let the water cool for 2 minutes.

Fill the teapot and two teacups halfway with hot water to warm them. Let the water sit for 1 minute, then discard it.

Scoop 1½ tsp. of sencha into the teapot. Pour 2 cups of hot water into the teapot.

Steep the sencha for exactly 3 minutes.

Carefully pour the brewed sencha into the teacups.

Tips & Warnings
Only steep the tea for 1 minute if you are using lower-grade sencha. Use filtered or distilled water for best results. Tap water often has a high concentration of minerals, which can adversely affect the taste of the tea.
