How to Make a Healthy Veggie Dip for Kids

You can get kids to eat their vegetables by making this healthy veggie dip for them. This dip can be used to dip vegetable slices into for a double dose of healthy veggies. Besides being tasty enough for kids to enjoy, they can also help to make this dip. Feel free to substitute the chopped carrots and cucumbers in this recipe for any vegetables you have on hand. The thawed, frozen spinach is optional, but it will give this dip an even more healthful boost from the dark greens.

Instructions

Things You'll Need:

  • 1/4 cup lite mayonnaise 1/2 cup low-fat sour cream 1/4 cup buttermilk (See tip) 1/4 cup mild salsa (or tomato sauce) 1/4 cup chopped carrots 1/4 cup chopped cucumbers 1/2 10 oz. package of frozen spinach thawed and squeezed dry (optional) 2 tbsp. fresh dill, chopped (See tip) 1 lemon or 2 to 3 tbsp. lemon juice Mixing bowl Stirring spoon Knife (See warning) Plastic wrap Sliced vegetables for serving (cucumbers, carrots, celery, zucchini)
  1. Step 1

    Give the child the lemon to roll on the counter. This will break up the membranes inside and make juicing easier.

  2. Step 2

    Combine the buttermilk, mayonnaise, sour cream and salsa in the bowl.

  3. Step 3

    Cut the lemon in half and squeeze the juice out of it into the bowl. Stir this into the dip mixture.

  4. Step 4

    Add the carrots, cucumbers and spinach to the dip and stir to combine.

  5. Step 5

    Sprinkle the chopped dill over the dip, cover the dip with plastic wrap and refrigerate for at least two hours to thicken. Serve with sliced vegetables.

Tips & Warnings
  • If you do not have 1/4 cup buttermilk, add an extra spoonful of lemon juice to the recipe and use 1/4 cup plain milk. Use 2 tsp. dried dill if you do not have fresh. Stirring can be done by the child in all of the steps.
  • Do not let children use the knife.
