Things You'll Need:
- ½ cup oat bran 1 ¾ cups oat flour ¼ cup rolled oats 1 ¼ cups almond meal ½ cup granulated sugar Large mixing bowl 1 tsp. baking powder ½ tsp. baking soda ¼ tsp. salt ½ tsp. ground cinnamon 2 cups buttermilk 2 large eggs Small mixing bowl Large skillet Vegetable oil cooking spray Serving plate Butter (optional) Syrup (optional) Ground cinnamon (optional)

Step 1
Combine the oat bran, oat flour, rolled oats, almond meal, and granulated sugar in a large mixing bowl. Mix well to combine and then add the baking powder, baking soda, salt, and ground cinnamon. Mix again to thoroughly distribute all ingredients.

Combine the buttermilk and egg in a small mixing bowl. Whisk thoroughly to beat the egg, and then add the mixture to the dry ingredients. Whisk a few times, just enough to thoroughly moisten the dry ingredients. Do not over-mix. The batter should be lumpy.

Heat a large skillet over medium-high heat for three to four minutes, or until a drop of water sizzles when placed on the cooking surface. Remove the pan from the heat and spray with vegetable oil cooking spray. Return to the burner immediately.

Pour about three tbsp. of batter onto the hot skillet and cook for two to three minutes, or until bubbles begin to form and break around the edges. Flip with a spatula and cook the other side for two to three minutes. Remove the oat bran pancakes from the pan and place on a serving plate.

Turn the oven to 200 degrees F and place the plate inside. This will keep the oat bran pancakes warm while the others are being cooked. Cook each one and, as it's done, place it on the plate and back into the oven. Serve pancakes with butter, syrup and ground cinnamon, if desired.
