When you're in the mood for an avocado and all the store has are hard green ones, you need a few tips on how to get what you want, within a day or two at least. Avocados don't ripen on their trees and are shipped to market hard and green. They start their ripening process in the warehouse and may come to the store ready to eat. Follow these instructions for all phases of avocado ripeness.

Things You'll Need:

  • Avocados Apple Paper bag Refrigerator Freezer
  1. Step 1

Determine whether your avocado is ripe by holding it in your hand and gently squeezing it. If it gives a little, it's ripe. If it gives a lot, it's suitable to mash for guacamole. If it doesn't yield at all, it isn't ready to eat.

  2. Step 2

Use the overripe avocado today. Use the one that gives slightly tomorrow. Place the unripened avocado in a brown bag on the counter and add an apple. Apples give off a natural gas that hastens ripening of avocados in a day or two.

  3. Step 3

Leave an unripened avocado in the fruit bowl on the counter and it will also ripen within 3 days. If all of your avocados are ripening at once, put them in your vegetable drawer in the refrigerator. The cold will retard ripening so you can enjoy all of your avocados before they are too ripe.

  4. Step 4

Prepare a bounty of ripe avocados for the freezer. Mash the fruit until it is pulpy and then put it in small containers. Avocados store for 6 months. Use avocado pulp in cooking or in dips.
