How to Make Pumpkin Cookies with Cake Mix

1. Use an electric mixer to beat the cream cheese and butter until smooth. Add the egg, pumpkin and extract.

2. Beat in the cake mix, in 1-cup increments.

3. Once the mixture is silky, refrigerate for two hours or until firm.

4. Preheat the oven to 350 degrees.

5. Spread the dough evenly on a greased cookie sheet. Bake 12 minutes and allow to cool, then cut the cookies into bars. They will be gooey and soft.
