Do your regular mashed potatoes need a little kick? Well, try these delicious Red Skin Mashed potatoes that are baked with Garlic and Parmesan. They are tasty and add a bit of spice to the traditional dinner plate.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Red Skin Potatoes
  • Milk
  • Butter
  • Garlic
  • Pepper
  • Parmesan Cheese
  • Casserole Dish
  1. Step 1

The amount of potatoes you will need depends on how many people you are feeding. Since red potatoes are small, plan on an average of about 2 potatoes per person

  2. Step 2

Add water to a pot. The water should reach up to about 2/3 the height of the potatoes. Cover the pot and heat until potatoes are tender. This should take about 20 minutes, but again, it will depend on how many potatoes you use.

  3. Step 3

When potatoes are tender, pour out excess water. At this point, if you prefer not to have potato skins in your mashed potatoes, peel them. Personally, I like the skins. Mash the potatoes.

  4. Step 4

Add about a half a cup of milk and a tablespoon of butter. If you prefer creamier potatoes, add more milk and butter.

  5. Step 5

Add garlic and pepper to taste. Then add about two tablespoons of parmesan cheese. Mix well.

  6. Step 6

Put potatoes into casserole dish. Sprinkle a heavy layer of parmesan cheese on top.

  7. Step 7

Bake at 350 degrees for about 25 minutes. The longer you bake the more of a golden crust you will get.

  8. Step 8
