How to Make a Tempeh Reuben

A tempeh reuben is a classic vegetarian sandwich. I want the rest of the world to know about it! Tempeh is low in fact, a great source of protein, and delicious!

Instructions

Things You'll Need:

  • tempeh
  • swiss cheese
  • sauerkraut
  • thousand island dressing
  • rye bread
  1. Step 1

    First, buy your tempeh. If you've never bought it before, go to the vegetarian specialty section where they sell tofu and vegan cheeses. If you can't find it, ask for help; the vast majority of super markets should have it. You can also make your tempeh, which in my opinion is well worth the time and energy (check back w/ aprilq soon for a make-your-own-tempeh recipe!). But the store bought kind is fine.

  2. Step 2

    Next, choose your bread. Many people like rye, but you can choose any kind you like. If you want to make a healthy choice go for bread without preservatives, and use whole wheat, flaxseed or pumpernickle.

  3. Step 3

    Now you're ready to cook up your sandwich. First, sautee the slices of tempeh in a lightly oiled pan (olive oil is best). Next, prepare your bread by spreading thousand island dressing on both slices. When your tempeh is done sauteeing, place it on the dressed slices, add a generous portion of sauerkraut, and then a slice (or slices) of swiss cheese. Broil or bake your sandwich for a minute or so, until the cheese is melted. Then enjoy!
