Things You'll Need:
- Large non-stick skillet
- Butter, 1/2 cup
- Heavy Cream, 1 pt
- Minced Garlic
- Salt
- Red Pepper Flakes
- Assorted Vegetables
- Parmesan Cheese, 1 1/2 cup
- Cooked and drained pasta
-
Step 1
Melt butter in skillet over medium heat.
-
Step 2
Add minced garlic and sauté for 2-3 minutes. Be careful not to let the garlic burn.
-
Step 3
Add tons of chopped vegetables. Probably about 6 cups.
I use zucchini, yellow squash, mushrooms, broccoli, tomatoes. Almost any combination can be used. Mix and match until you find your favorites. -
Step 4
After vegetables have reached desired tenderness, add heavy cream and Parmesan cheese. I use the grated cheese in the can.
-
Step 5
Season with salt. Add red pepper flakes. 1 tablespoon is moderately spicy. Good for kids. If you add 2-3 tablespoons you could almost call it Creole. Very spicy and good!
-
Step 6
Allow mixture to come to a very gentle boil. Reduce heat and cook for 5-10 minutes.
-
Step 7
Serve over pasta.
