How to Make Easy Vegetable Primavera

This Vegetable Primavera is delicious and fast. We like it in the summer when we have an abundance of zucchini and yellow squash. Even my kids love it.

Difficulty: Easy
Instructions

Things You'll Need:

  • Large non-stick skillet
  • Butter, 1/2 cup
  • Heavy Cream, 1 pt
  • Minced Garlic
  • Salt
  • Red Pepper Flakes
  • Assorted Vegetables
  • Parmesan Cheese, 1 1/2 cup
  • Cooked and drained pasta
  1. Step 1

    Melt butter in skillet over medium heat.

  2. Step 2

    Add minced garlic and sauté for 2-3 minutes. Be careful not to let the garlic burn.

  3. Step 3

    Add tons of chopped vegetables. Probably about 6 cups.
    I use zucchini, yellow squash, mushrooms, broccoli, tomatoes. Almost any combination can be used. Mix and match until you find your favorites.

  4. Step 4

    After vegetables have reached desired tenderness, add heavy cream and Parmesan cheese. I use the grated cheese in the can.

  5. Step 5

    Season with salt. Add red pepper flakes. 1 tablespoon is moderately spicy. Good for kids. If you add 2-3 tablespoons you could almost call it Creole. Very spicy and good!

  6. Step 6

    Allow mixture to come to a very gentle boil. Reduce heat and cook for 5-10 minutes.

  7. Step 7

    Serve over pasta.

Tips & Warnings
  • This is a great way to use some extra garden vegetables. Throw everything in!!
