Beef and vegetable stir-fry topped with puff pastry.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1/4 pounds beef sirloin steak
  • 1/2 package (about 17-1/4 ounces) frozen puff pastry, defrosted
  • 1 egg yolk beaten
  • 1 tablespoon lukewarm water
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dried thyme leaves, crushed
  • 1 package (16 ounces) frozen vegetables (i.e. broccoli, cauliflower, carrot, mushroom, red pepper)
  • 1/4 cup chopped onion
  • 1 jar (about 12 ounces) beef gravy
  1. Step 1

    Preheat oven to 400 degrees F. Meanwhile, lightly flour work surface and unfold your puff pastry sheet on there.

  2. Step 2

    Cut out four 4" circles and place on ungreased baking sheet. Optional: Cut decorative pieces from pastry scraps and arrange on pastry circles.

  3. Step 3

    Mix egg yolk with lukewarm water in a small bowl. Brush pastry with egg yolk wash.

  4. Step 4

    Bake pastry in 400 degrees F oven until golden brown, about 14 minutes. Transfer pastry to wire rack.

  5. Step 5

    Prepare beef sirloin while pastry is cooling. First cut beef lengthwise in thirds, then crosswise into 1/2" thick strips.

  6. Step 6

    Heat 1 tablespoon cooking oil in a nonstick skillet over medium-high heat. When oil is smoking, stir-fry beef in 2 batches until outside is no longer pink, about 1-1/2 minutes each batch. Sprinkle with thyme and pepper.

    Remove each batch onto a plate when done. Set aside.

  7. Step 7

    Heat remaining 1 tablespoon oil until hot in he same skillet. Add onion and thawed vegetables. Stir fry 6 minutes or until vegetables are cooked through. Reduce heat to medium.

  8. Step 8

    Stir in gravy and return beef to the skillet. Cook until mixture just heated through.

  9. Step 9

    Spoon mixture among 4 bowls or plates and top with puff pastry. Serve while hot.
