Things You'll Need:
- (For the Garlic Bread)
- 1 loaf French bread
- 3/4 cup butter, softened
- 2 tablespoons fresh minced garlic
- 2 teaspoons dried parsley or fresh parsley
- 1/3 cup grated Parmesan cheese
- Salt to taste
- (For the Fish Stew)
- 2 cup mushrooms, sliced
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon oil, olive
- 1 tablespoon thyme
- 1 quart tomato juice, or vegetable cocktail
- 2 teaspoon sugar
- 1 bay leaf
- 1/2 teaspoon hot sauce
- 1/2 teaspoon black pepper
- 1 pound fish, (e.g. catfish, cod)
- 1/4 cup parsley, dried or fresh
- 1 cup celery, chopped
- 1 large tomato, chopped

Step 1
Slice French bread in 2" intervals. Preheat oven to 375 degrees F.

Combine garlic, softened butter, parsley and Parmesan cheese in medium bowl, mix well.

Garlic breadSpread the garlic-butter mixture on both the French bread pieces. Arrange garlic bread on baking tray, place foil on top covering the bread and bake in oven for 12 minutes or until heated through. Remove from heat and keep warm.

In a large saucepan over medium heat with cooking oil, sauté the celery, onion, mushrooms and garlic, about 6 minutes.

Add the sugar and thyme, cook for 1-1/2 minutes. Pour in the tomato juice, add bay leaf, pepper, and pepper sauce. Turn up heat and bring contents to a boil.

Tomato fish stewReduce heat and the fish. Simmer on medium-low uncovered, about 12 minutes. Discard the bay leaf then stir in parsley and chopped tomato. Cook for additional 1 minute. Turn heat off. Serve hot with garlic bread.
