This low carb potato salad may be just the thing to satisfy carvings if you're on low carb diet like Atkins or South Beach. It uses cauliflower instead of potatoes. The texture and flavor of the cauliflower-based salad will resemble an actual potato salad. Does this Spark an idea?

Things You'll Need

  • 1 cauliflower, cut into bite size pieces
  • 1/2 cup of green onions
  • 1 cucumber, seeded and diced
  • 1/4 cup chopped parsley
  • 4 hard-boiled eggs
  • 3 packets of sugar substitute
  • 3/4 cup mayonnaise
  • 2 tsp. dijon mustard
  • 2 tbsp. apple cider vinegar
  • Salt and pepper to taste
  • Paprika to garnish

Instructions

      Steam the cauliflower pieces until they are tender. Rinse the pieces under cold running water to stop the cooking process.

      Put the cauliflower pieces into a bowl, and mix them with the onions, cucumber and parsley. Chop the eggs and add them to the salad.

      In a separate bowl, combine the mayonnaise, mustard, vinegar, sugar substitute and salt and pepper.

      Pour the mayonnaise mixture over the salad. Mix the salad until the cauliflower and vegetables are coated with the mixture. Decorate with slices of hard-boiled egg and a parsley sprig. Sprinkle with paprika.

      Place the salad in the refrigerator for an hour or two so the flavors can mix.
