This low carb potato salad may be just the thing to satisfy those high carb carvings if you're on low carb diet like Atkins or South Beach. What makes this mock potato salad recipe low carb is substituting cauliflower for potatoes. You'll be amazed at the texture and flavor. This low carb potato salad taste just like the real thing.

Instructions

Things You'll Need:

  • 1 cauliflower, cut into bite size pieces
  • 1/2 cup of green onions, white and green parts
  • 1 cucumber, seeded and diced
  • 1/4 cup chopped parsley
  • 4 hard-boiled eggs
  • 2-3 packets of sugar substitute
  • 3/4 cup mayonnaise
  • 2 tsp dijon mustard
  • 2 Tbsp apple cider vinegar
  • Salt and pepper to taste
  • Paprika to garnish
  1. Step 1

    Steam cauliflower pieces until tender, but not too soft. Rinse the cauliflower pieces under cold running water to stop cooking. Cool until ready to assemble the salad.

  2. Step 2

    Put cauliflower pieces into bowl. Add green onions, cucumber and parsley to the cauliflower. Chop three of the four eggs. Add to salad.

  3. Step 3

    Combine mayonnaise, mustard, vinegar and sugar substitute until smooth. Add salt and pepper to taste.

  4. Step 4

    Pour mayonnaise mixture over salad. Mix to coat the cauliflower and vegetables. Decorate with slices of hard-boiled egg and a parsley sprig. Sprinkle with paprika.

  5. Step 5

    Enjoy this low carb potato salad without guilt.
