Things You'll Need:
- 2 lbs.apples
- 2 Tb. butter
- 1 Tb. sugar
- 1/2 lb. Roquefort cheese
- 1-2 Tb. cream

Step 1
Frying ApplesPeel core and cut the apples into thin slices. Melt 2 Tb. butter in a frying pan. Add the apples. Sprinkle the apples with sugar and cook until the apples are golden brown but remove them before they get soft.

Step 2
Making a PasteNext you will need a large bowl to work the cheese and cream into a paste. I use the back of a wooden spoon.
Spread the paste out over each crepe you are preparing; be sure to cover the full surface. Then put 1-2 Tb. sauteed apple slices in each crepe and roll or fold the crepes into envelopes. -
Step 3
Envelope Folded CrepeLay the crepe on a buttered ovenproof dish, dot with 1 Tb. butter and bake in preheated 400 degrees F. oven for 15 minutes. Decorate the dish with apple slices and add a dollop of whip cream on top.
