How to Make Apple Crepes with Roquefort Cheese

Wonderful desserts and meals can be made with crepes. This is a wonderful crepe to make for breakfast or even for a healthy afternoon snack.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 lbs.apples
  • 2 Tb. butter
  • 1 Tb. sugar
  • 1/2 lb. Roquefort cheese
  • 1-2 Tb. cream
  1. Step 1

    Peel core and cut the apples into thin slices. Melt 2 Tb. butter in a frying pan. Add the apples. Sprinkle the apples with sugar and cook until the apples are golden brown but remove them before they get soft.

    Next you will need a large bowl to work the cheese and cream into a paste. I use the back of a wooden spoon.

    Spread the paste out over each crepe you are preparing; be sure to cover the full surface. Then put 1-2 Tb. sauteed apple slices in each crepe and roll or fold the crepes into envelopes.

    Lay the crepe on a buttered ovenproof dish, dot with 1 Tb. butter and bake in preheated 400 degrees F. oven for 15 minutes. Decorate the dish with apple slices and add a dollop of whip cream on top.
