Things You'll Need:
- 6 large baking potatoes
- 8 tablespoons butter, divided
- 1/4 pound bacon, diced
- 1 medium onion, finely chopped
- 1/2 cup milk
- 1 egg
- 1/2 teaspoon salt
- 1/8 teaspoon white pepper
- 1 cup shredded cheddar cheese

Step 1
The first thing that you need to do is to scrub the potatoes clean and pierce holes in them with a fork. Rub each potato with a teaspoon of butter. Place them on a baking sheet and bake at 375 degrees for one hour or until tender. While these cook you will need a small skillet where you will cook the bacon over medium heat until crisp.

Step 2
Remove the bacon from the skillet and drain the excess grease off of the bacon by draining on paper towels. You will need to reserve one tablespoon of the bacon drippings. In another skillet add the tablespoon of bacon drippings and your onions. Sauté the onions until tender and sit aside. After you removed the potatoes from the oven and they have cooled enough to handle. You will not cut a thin slice in the tops of them and remove the pulp leaving only a thin line to hold the skin together.

In a bowl you will use the potatoes that your removed and you will mix in the remaining butter, milk, egg, salt, and pepper. Once you have all of these ingredients mixed together you will then add in the cheese, bacon, and onions. Then you will spoon this mixture into the potato shells. Then place on a baking sheet and place in the oven on 375 degrees for 20 to 25 minutes or until fully heated.
